This smoothie is pure heaven! According to the Medical Medium, wild blueberries are one of the most nutritious foods and have the highest proportion of antioxidants of any food on the planet. Blueberries are wonderful for the liver!

This smoothie is easy to make — mix and match fruits and vegetables to your create your own special concoction! Combine different fruits to get in extra nutrients and to change up the smoothie on a daily basis. The kids will love it too and it’s a great way to sneak some veggies into their diet! Be sure to use WILD BLUEBERRIES!

It’s Tomato Time: Celebrate the Summer with a Vegan Caprese Salad!

I am loving this vegan version of Caprese Salad! My favorite thing is to provide an amazing vegan dish at parties and introduce my friends to how delicious vegan cooking can be. This combination was so easy to make and is a great option for a light meal, snack or an appetizer. The secret YUM ingredient is the raw coconut vinegar—it is a rich source of many nutrients like B vitamins—and is also a source of gut-friendly bacteria known as probiotics due to the 8- to 12-month fermentation process.

This nourishing salad took 5 minutes to prepare and is such a versatile dish. I will definitely be making this for future dinner parties!

Ingredients:

Hot House Tomatoes

Avocado

Fresh Basil Leaves

Drizzle to taste:

Red Onion Shavings

Olive Oil

Raw Coconut Vinegar

Pink Himalayan Sea Salt

White Pepper

Books I Love! “Radical Forgiveness,” by Colin Tipping

If you are going through a difficult time, trying to forgive someone in your life who has harmed you, then Radical Forgiveness could be the lifeline you need. It is an amazing and insightful book on the act of forgiveness and human compassion. When I was going through my most recent divorce, I could not get my hands on enough insightful books. I was determined to learn everything that I could about healing myself and my past relationships. I began to look for patterns in the relationships that I had chosen, and the people that I had welcomed into my life. This book came to me at the perfect time—when I felt confused about the end of my marriage, when I felt devastated and angry, and when I couldn’t find peace in the situation. If you, like me, have a very analytical mind, but are also an empath, you know this combination makes it difficult to process things that are out of our control.

From the moment I picked up Radical Forgiveness, I knew it had fallen into my hands at exactly the right time, as all of the books that I read do. Any relationship is at risk; love relationships, family, friendships and just plain old human interaction.

Shifting the perception of your circumstances, and the circumstances of the person that you want to forgive, really goes a long way to living a joyful life. This book talks you through the concepts of radical forgiveness and provides compelling stories that illustrate how you can become a lighter and happier person. A victim mentality is what does us all in when we feel we have been wronged or harmed by another person. You also have to factor in forgiveness for YOURSELF. Radical Forgiveness provides functional and easy exercises to really break through the forgiveness barrier so that you can get to living the life that you deserve.

I believe that the root of illness often stems from holding onto anger, resentment and blame, and being able to reach a more peaceful state of mind. It takes conscious awareness to begin to open up to the beautiful things, people and moments of our lives. You cannot live a happy, open and abundant life carrying around a bunch of bullshit baggage that doesn’t serve you. We have the power to change how we interact with each other, and if you can begin to see the people (and yourself) that are in your life as beautiful souls having a human experience, then we can find compassion for each other. My Ultimate Green Goddess Smoothie Recipe!

This green smoothie packs a huge punch—it increases energy, helps to reduce inflammation, aids in detoxification and digestion, helps to balance hormones and provides a mood lift! I begin my days with this powerhouse smoothie as closure to intermittent fasting and find that it helps to energize my whole day. It also keeps me full for hours and tastes DELICIOUS! Interesting fact: Did you know that the “chewing” your smoothie helps to get your digestive fluids in play, aids in upping metabolism and keeping your blood glucose levels steady. This smoothie is also great for those of us that have the MTHFR gene (which changes the way your body metabolizes nutrients into active vitamins, minerals, and proteins your body can use) because it helps us to detoxify, among other things.

Ingredients:

  • 2 small handfuls Spinach (can substitute Kale, Romaine or Bibb Lettuce or a combination)
  • 1/2 small Green Apple (can substitute pear)
  • 1-2 stalks Celery
  • 1/2 Avocado
  • 1/2 Banana (optional: I don’t use banana everyday, but find benefit from the probiotics)
  • 2 TBS Cilantro
  • 2 TBS Parsley
  • 2 tsp Grated Ginger
  • Juice of 1/2 Lemon & Lime
  • Coconut Water or Plain Water
  • Supplements (add whatever works for you) (I use: 1 tsp maca powder, 1 tsp flax seeds, 1 tsp chia seeds, 1 tsp cordyceps)

Blend all ingredients. I use a NutriBullet and it is my best friend! https://www.nutribullet.com Helpful hint: You can pre-measure most of the ingredients and place in individual freezer bags or containers to make your morning prep and routine quick and easy! I freeze everything with the exception of the lemon and lime, water and supplements and just add those to the blender. Very easy to make and run! Enjoy! Here’s to your health!
